Who doesn't love a good buffalo chicken dish? This healthy Buffalo Chicken Salad is great on it's own, on top of greens to make a delicious salad, or our favorite, as a melt on top of sprouted bread and smothered with cheese.

INGREDIENTS

3 organic chicken breasts, roasted and shredded

1/4 c. Fage 0% fat Greek Yogurt

1/8 c. hot sauce (we used Kroger Spicy Garlic Wing Sauce)

Roast and shred the chicken, put in a bowl

Mix the Greek yogurt (we have found Fage to be the creamiest and best with this dish) and hot sauce with the chicken. Have you ever heard that your hands are the best tools in the kitchen? That is definitely the case here! The trick is to mix this with your hands until everything is combined together.

From here, do what you want! You can eat it by itself, put on top of some crunchy lettuce, or make a melt like we did. To make the melt, heat oven to 350 degrees. Put buffalo chicken on top of a piece of sprouted bread, then top with organic white cheddar cheese. Cook in oven until cheese is melted. Sounds weird, but pickles are oddly good on top of this combo - try it out!
