Taco Tuesday... who doesn't love that?!?! One night a week to relax and enjoy a fiesta in your mouth!
If you're trying to stay healthy but still enjoy the taste of tacos, read on to see how we put all of the ingredients together in a different way to get the same great taste without all the calories, carbs, and fat.
INGREDIENTS

16 oz. lean ground turkey

Taco seasoning - your favorite brand will work

1 can fat free refried beans

Head of red leaf lettuce, chopped

Red pepper, diced

Guacamole (for this one we used Pineapple Poblano)

1 cup organic brown rice
-
2-3 T. Cilantro, chopped
-
Juice of 1 lime

Salt and pepper
DIRECTIONS
Brown the ground turkey in a skillet or pan and follow directions on taco seasoning to make into taco meat.
If you are adding rice to this meal, cook rice in separate pan, according to directions (usually 1 c. rice with 2 c. water). Once cooked, fluff with a fork and add the juice of one lime, cilantro and salt + pepper. (you can add some coconut oil to the rice for added flavor, but this will increase the fat content of the meal)
Heat refried beans in oven until warm.
Layer up that salad! Put your lettuce on a plate or in a bowl, and top with refried beans, rice, turkey, peppers and guacamole. No need for a dressing because the guacamole and beans are delicious enough!
