It's still hot and humid over here, but fall is slowly creeping it's way in and we couldn't be more excited about it!!! Give these Chocolate Chip Pumpkin Energy Bars a try - you won't be disappointed!
Great for an after workout snack or mid-day craving.
Ingredients

1 cup organic old fashioned oats

2 Tbsp organic unsweetened Coconut flakes, plus extra for topping

1.5 scoops Propello Life Vegan Protein Spiced Vanilla (BUY NOW)

1 Tbsp non-gmo Chia Sees

1/4 cup Natural Peanut Butter

2/3 cup organic Pumpkin Puree

2 tsp Vanilla Extract
-
2 Tbsp unsweetened dried cranberries

1/4 cup (3 servings) Dark Chocolate Chips (60% Cacao)
Directions

Put oats and coconut into a food processor and blend until broken down.

Add the remainder of the ingredients (except dried cranberries and chocolate chips) and blend until combined.

Add dried cranberries and chocolate chips, lightly blend until mixed in.

Place mixture into a glass dish, press down with your hands or a spatula.

Refrigerate 30 minutes

Remove from refrigerator, and cut into desired size and number of bars (we used a square dish and cut into ten rectangular bars).
