Pad Thai is one of our family favorite meals. But it can get unhealthy in a hurry depending on the sauce and ingredients. In our quest for better health and delicious food, we took some of our favorite recipes and made them healthy and delicious. Here is our Healthy Pad Thai Recipe we came up with. INGREDIENTS

1 1/2 lbs Chicken Breast

1 1/2 tablespoons Garlic Paste

1/2 box Brown Rice, Gluten Free Pasta
-
Red Peppers
-
Sugar Snap Peas
-
Rainbow Carrots
-
Green Onions
-
1/4 cup Rice Vinegar
-
1/8 cup Coconut Aminos (alternative to Soy Sauce - different than our amazing Aminos!)
-
1 tablespoon Natural Peanut Butter
-
1/4 cup Sweet Chili Sauce
-
Juice from 1 Lime
-
Cilantro (as garnish)
DIRECTIONS

Cook 1 1/2 lbs of chicken breast (cut into small slices) in a skillet with 1 1/2 tablespoons of garlic paste.

Boil water in a medium sized pot. Add 1/2 box of brown rice, gluten free pasta and follow cooking directions on the box. Drain and rinse with water when done.

While chicken and pasta are cooking, chop up veggies into thin slices.

To make the sauce, whisk together in a bowl:

1/4 cup rice vinegar

1/4 cup sweet chili sauce

1/8 cup coconut aminos
-
juice from 1 lime
-
1 tablespoon natural peanut butter

When everything is done cooking, toss in drained pasta, veggies, and sauce to the skillet with the chicken and add some cilantro!
Makes about 3 servings, and is great for leftovers. So make enough for lunch the following day!
