What's better than chocolate? Chocolate and mint!!!
This bar tastes a bit like those beloved Thin Mint Girl Scout cookies, without all the guilt. These bars are simple, quick, and delicious!
Preparation time: 10 minutes
Servings: 10 bars
INGREDIENTS

1 1/2 c. almond flour

2 scoops Propello Life Vegan Protein Dirty Chocolate

1/2 c. cocoa powder

1/2 c. peanut butter

1/2 tsp sea salt
-
1/2 c. honey
-
1 tsp vanilla extract
-
1 tsp peppermint extract
-
1/4 c. mini chocolate chips or dark chocolate chips for topping
DIRECTIONS

Line an 8x8" glass pan with parchment paper

Mix almond flour, protein powder, cocoa powder and salt in a large bowl

In a smaller bowl, mix together peanut butter, honey, peppermint extract and vanilla extract

Pour wet ingredients into dry ingredients, and mix. The best way to mix all of this is with your hands - the best tools in the kitchen!

Pour mixture into glass dish, and use your hands to FIRMLY press mixture down

Sprinkle on any additional toppings you want, like the chocolate chips!

Place in refrigerator for 30 min.

Take out of fridge, cut into two rows of five, or ten squares and enjoy!!!
